Easy Peasy Meal of the Week #1: Cilantro Chicken Apple Slaw

Welcome to the first ever Easy Peasy Meal of the Week here at Tiffany Writes Things, where we keep things simple and delicious! This dish will sound strange to some but tasty to others, and it's certainly for those who love a light, fresh meal with a little kick. So let's cut to the chase.
What You'll Need:
Slaw:
About 4 ounces canned chicken breast
Handful of shredded cabbage
1 apple (I used Fuji)
1/4 large cucumber
Generous sprinkling of feta
Salt + pepper to taste
Dressing:
1 tablespoon of fresh lime or lemon juice
1 teaspoon of apple cider vinegar
Sprinkle of stevia OR 1/2 teaspoon of honey
Garnish:
Fresh cilantro
Pull apart chicken chunks to shred, then chop apple and cucumber into small chunks. Throw in a bowl with the shredded cabbage, then top with lime or lemon juice, ACV, and stevia or honey. Season with salt and pepper to taste, then top with fresh cilantro. That's it! Super simple. If you're feeling bold, drizzle some sriracha over it for an extra kick. This meal is completely gluten free, and simply skip the feta to make it dairy free as well. This recipe serves one, but just double or quadruple it to make a family dinner! All ingredient amounts can be adjusted for preference.
